  • Bring a pot of water to boil.
  • Set up a bowl of ice water beside the pot.
  • Blanch zucchini in boiling water for 1 to 2 minutes.
  • Scoop out zucchini and immediately transfer to the ice water to cool.
  • Drain zucchini and pat dry.
  • Fill freezer bags with the zucchini, pressing out air and labeling each bag.
  • Freeze flat and in portion sizes.
