  • 8 oz sharp cheddar cheese, shredded Use a block and shred for best melt and flavor
  • 8 oz cream cheese, softened Leave at room temperature 30–60 minutes

Vegetables and Seasonings

  • 1 cup sweet pimentos, chopped Drained
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper Optional — adds subtle heat
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, add the softened cream cheese and shredded cheddar.
  • Stir in the chopped sweet pimentos, garlic powder, onion powder, and cayenne (if using).
  • Season with salt and pepper and mix until everything is evenly combined.
  • Transfer the mixture to a disposable foil pan or an oven-safe baking dish, spreading it into an even layer.

Baking

  • Bake for 20–25 minutes, until the dip is hot and bubbly and the top is lightly golden.
  • Remove from the oven and let sit for 2–3 minutes before serving to avoid burning guests’ mouths.

Notes

Cool the dip to room temperature, then transfer leftovers to an airtight container. Refrigerate for up to 3–4 days. For reheating, bake at 350°F (175°C) until hot, or microwave in 30-second bursts. Can freeze for up to 2 months.
