  • 2 tablespoons lime juice
  • 1 teaspoon lime zest

For the Mango Salsa

  • 1 ripe mango diced Choose a mango that gives slightly when pressed.
  • 1/4 cup red onion diced
  • 1 piece jalapeño minced
  • 1/4 cup cilantro chopped
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • In a bowl, whisk together honey, lime juice, lime zest, salt, and pepper until well combined.
  • Place chicken breasts in the marinade and let them soak for at least 30 minutes.
  • Preheat the grill or oven to medium-high heat.

Cooking

  • The chicken should be golden-brown and firm to the touch when done.

Making the Salsa
