Ingredients
  

For the marinade

  • 1/4 cup honey Use mild or clover honey for balanced sweetness.
  • 2 limes Juice of 2 limes Fresh lime juice provides bright acidity.
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika

For the chicken

  • 4 pieces boneless, skinless chicken breasts Ensure uniform size for even cooking.
  • Olive oil for cooking

For the rice

  • 1 cup jasmine rice Rinse before cooking to avoid gummy rice.
  • 2 cups water
  • pinch salt

For the topping

  • 2 pieces ripe avocados
  • Bell peppers (as desired), chopped
  • Corn (as desired)

Instructions
 

Preparation

  • In a bowl, whisk together the honey, lime juice, garlic powder, cumin, and paprika until well combined.
  • Add the chicken breasts to the marinade, ensuring they are fully coated. Let them marinate for at least 30 minutes.

Cooking the rice

  • Rinse jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with water and salt.
  • Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15-20 minutes until water is absorbed and rice is tender.

Cooking the chicken

  • Heat olive oil in a skillet over medium-high heat. Remove chicken from marinade, reserving marinade for later.
  • Cook the chicken in the hot skillet for 6-7 minutes per side until golden brown and internal temperature reaches 165°F.

Making the glaze

  • Pour the reserved marinade into the same skillet and bring to a boil. Reduce heat and let it simmer for 5 minutes, stirring occasionally until it thickens.

Assembling the bowl

  • Slice the ripe avocados while the chicken rests. Prepare any additional vegetables such as bell peppers and corn.
  • On each plate, layer fluffy jasmine rice, sliced chicken, avocado, and chopped vegetables. Drizzle the honey lime sauce over the top.

Notes

For meal prep, store assembled bowls in airtight containers for up to 3 days. Add avocado fresh when serving to prevent browning.
