Ingredients
  

For the Chicken

  • 4 pieces Boneless, Skinless Chicken Breasts (Thighs can also be used.) Choose evenly sized pieces for uniform cooking.
  • 3 tablespoons Honey (Can substitute with maple syrup.) Look for mild liquid honey.
  • 2 tablespoons Lime Juice (Fresh lime preferred.) Fresh lime is essential for bright acidity.
  • 1 tablespoon Lime Zest Zest before juicing for maximum flavor.
  • 2 tablespoons Olive Oil (Avocado oil is a substitute.)
  • 2 cloves Garlic (Minced, fresh preferred.)
  • 1 teaspoon Cumin (Can substitute with coriander.)
  • 1 teaspoon Smoked Paprika (Regular paprika can be used.)
  • to taste Salt Adjust according to preference.
  • to taste Pepper Adjust according to preference.

For Serving

  • 2 cups Cooked Jasmine or Basmati Rice (Cauliflower rice can be used for low-carb.)
  • 1 medium Ripe Avocado (Ensure it’s ripe.) Use lime juice to prevent browning.
  • 1 tablespoon Extra Lime Juice
  • 1 tablespoon Olive Oil
  • to taste Fresh Cilantro or Parsley (For garnish.)
  • to taste Chili Flakes (For heat.)
  • 1 tablespoon Toasted Sesame Seeds (For garnish.)

Instructions
 

Preparation

  • Make the honey-lime marinade by whisking together honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper in a bowl.
  • Toss the chicken in the marinade and let sit for 10–30 minutes at room temperature, or refrigerate for up to 2 hours.

Cooking

  • Heat a large skillet over medium-high heat and add a thin film of oil.
  • Sear chicken for 4–6 minutes per side, basting with leftover marinade, until the internal temperature reaches 165°F (74°C).

Rice Preparation

  • Fluff cooked rice with a fork and keep warm.

Avocado Topping

  • Halve and slice the ripe avocado, then toss gently with extra lime juice, olive oil, chopped cilantro or parsley, and chili flakes.
  • Sprinkle with toasted sesame seeds.

Serving

  • Spoon rice into bowls, top with sliced honey-lime chicken, and garnish with the avocado mixture and extra cilantro.
  • Serve immediately with lime wedges and chili flakes on the side.

Notes

Store leftovers in airtight containers; chicken and rice can be refrigerated for up to 3-4 days. Avocado should be used within 24 hours for best texture.
