  • 1 lb Carrots (baby or sliced regular) Choose firm, bright orange carrots for best flavor.
  • 3 tbsp Honey Any pure honey works, wildflower or clover preferred.
  • 2 tbsp Butter Melted for the glaze.
  • 1 tsp Dijon mustard Adds a gentle tang.
  • 1 tbsp Brown sugar (optional) For added sweetness.
  • ¼ tsp Ground cinnamon Balances sweetness.
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 1 tbsp Fresh parsley (for garnish) Chopped for serving.

Preparation

  • Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper for easy cleanup.
  • Melt butter in a small saucepan or microwave-safe bowl. Stir in honey, Dijon mustard, brown sugar (if using), salt, pepper, and cinnamon to make the glaze.
  • In a large bowl, toss carrots with the glaze until evenly coated.

Cooking

  • Spread the carrots in a single layer on the sheet pan.
  • Roast for 20–25 minutes, stirring halfway through, until tender and slightly caramelized.
  • Drizzle any remaining glaze over the carrots after roasting, sprinkle with chopped parsley, and serve warm.

Notes

Use a hot oven for best caramelization. Toss halfway through roasting for even glazing. For extra shine, brush a bit more honey after roasting. You can also customize the recipe to your taste by adding spices or combining with potatoes.
