  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix the diced sweet potatoes with the olive oil, salt, black pepper, garlic powder, and paprika until every piece is well coated.
  • Spread the seasoned sweet potatoes evenly on a baking sheet.
  • Cut the honey garlic sausage into bite-sized pieces and scatter them over the sweet potatoes.
  • Roast everything in the preheated oven for 25-30 minutes, stirring halfway through to ensure even cooking. The sweet potatoes should be tender, and the sausage should be heated through.
  • If desired, garnish with fresh parsley before serving warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave. This dish freezes well for about 2-3 months. Consider adding bell peppers or Brussels sprouts for extra flavor.
