  • 1 lb Carrots Firm and brightly colored, cut into even-sized pieces.
  • 2 tbsp Olive oil High-quality extra-virgin olive oil.
  • 2 tbsp Honey Mild-flavored honey is preferred.
  • 2 cloves Garlic (minced) Freshly minced for best flavor.
  • 1 tbsp Dried dill or fresh dill Adds herbal flavor.
  • 1/2 cup Feta cheese (crumbled) For topping just before serving.
  • 1 tsp Salt For seasoning.
  • 1/2 tsp Black pepper For seasoning.

Preparation

  • Preheat the oven to 425°F (220°C).
  • Peel and cut the carrots into even-sized pieces, aiming for 1/2- to 3/4-inch batons.
  • In a large bowl, toss the carrots with olive oil, honey, minced garlic, dill, salt, and black pepper until well coated.
  • Spread the carrots out in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  • Remove from the oven and sprinkle with crumbled feta cheese before serving.

Notes

These carrots can also be stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat on a baking sheet to retain crispness.
