Main Ingredients

  • 1 pound ground turkey (preferably 93% lean) for best texture
  • 1 tablespoon olive oil or a neutral oil like avocado
  • 4 cloves garlic, minced or 1 1/2 teaspoons garlic powder in a pinch
  • 1/4 cup honey substitute maple syrup for a different sweetness
  • 1/4 cup soy sauce use low-sodium to reduce salt
  • 1 tablespoon rice vinegar apple cider vinegar works if needed
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger or 1 teaspoon fresh grated ginger
  • 1/2 teaspoon black pepper

Garnishes

  • 2 green onions sliced for garnish
  • Sesame seeds optional, for garnish

Instructions
 

Cooking

  • Heat a large skillet over medium heat. Add the olive oil and let it warm for 30 seconds.
  • Add the ground turkey to the skillet. Break it into pieces with a spatula and cook until no longer pink, about 5–7 minutes. Stir occasionally so it browns evenly.
  • Add the minced garlic and cook for 1–2 minutes until fragrant. Don’t let it burn.
  • In a small bowl, whisk honey, soy sauce, rice vinegar, sesame oil, ground ginger, and black pepper until smooth.
  • Pour the sauce over the cooked turkey. Stir to coat every bit of meat.
  • Reduce heat to low and simmer for about 5 minutes, stirring once or twice, until the sauce thickens slightly and glazes the turkey.
  • Remove from heat. Garnish with sliced green onions and sesame seeds if desired. Serve immediately.

Notes

Refrigerate cooled leftovers in an airtight container within 2 hours of cooking. Store up to 3–4 days. To reheat, warm on the stovetop with a splash of water or broth or microwave in 30-second bursts. Can be frozen for up to 3 months.
