  • 2 tbsp Olive Oil Use extra virgin for best flavor.
  • 1.5 cups Long-Grain White Rice Fluffy texture that absorbs broth; brown rice can be used but may alter cooking time.
  • 3 cups Chicken Broth or Water Using broth adds depth of flavor.
  • 1 cup Barbecue Sauce
  • 0.5 cup Honey
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.

Preparation

  • Gather all your ingredients and preheat your oven.
  • Heat the olive oil in a large pan over medium heat. Season the chicken thighs with salt and pepper. Sauté the chicken until browned on both sides, about 5 minutes per side.
  • Add chopped onion and minced garlic to the pan, stirring frequently until they become translucent, about 3 minutes.
  • Stir in the long-grain white rice and toast it slightly for 1-2 minutes to enhance the nutty flavor.
  • Pour in the chicken broth and add barbecue sauce along with honey. Stir well.
  • Bring the mixture to a simmer, then cover the pan and transfer it to a preheated oven. Bake for 20-25 minutes until the rice is cooked through.

Notes

Monitor the chicken's internal temperature; it should reach 165°F for safe consumption. If the rice isn’t fluffy, add a bit more broth and cover to steam for an additional 5 minutes. This dish can be customized with different sauces and vegetables.
