  • 2 pieces boneless, skinless chicken breasts or thighs for added richness
  • 6 cups chicken broth preferably homemade
  • 2 cups egg noodles can swap for whole grain or gluten-free varieties
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

  • In a large pot over medium heat, add a splash of oil and sauté the onion, carrots, and celery until softened, about 5–7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Add the chicken breasts and thyme, then reduce heat to a simmer. Cook for 20–25 minutes, or until the chicken is cooked through.
  • Remove the chicken from the pot, shred it with two forks, and return it to the pot.
  • Stir in the egg noodles and cook according to package instructions, usually around 6–8 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For storage, let the soup cool completely, then transfer it to an airtight container. It can be stored in the refrigerator for up to 4 days or frozen in individual portions for longer storage. When reheating, always ensure it’s heated thoroughly and never reheat more than once.
