Ingredients
  

Dough Ingredients

  • 4 ½ cups all-purpose flour (spooned and leveled; plus more if needed)
  • 1 tablespoon sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • 1 ¾ cups warm milk (or water; around 110°F) (can replace milk with water for a dairy-free version)
  • 2 tablespoons melted butter

Boiling Solution

  • 9 cups water
  • ½ cup baking soda

Egg Wash

  • 1 large egg (mixed with 1 tablespoon of water)

Preparation

  • In the bowl of a stand mixer, combine the flour, sugar, yeast, warm milk, melted butter, and salt. Mix on medium speed with a dough hook for about 4-5 minutes until you get a smooth dough. If your dough seems too sticky, add a touch more flour.
  • Cover the bowl and let the dough rise in a warm place for 30-60 minutes, or until it doubles in size.

Cooking

  • Preheat your oven to 450°F and line two baking sheets with parchment paper. In a large pot, bring the water and baking soda to a boil.
  • Divide the risen dough into 12 pieces. Roll each piece into a rope of about ¾ inch thick, then cut into 1-2 inch bites.
  • Carefully drop the bites into the boiling water for 30 seconds, then transfer them to the prepared baking sheets. Make sure to leave enough space between each one.
  • Brush the bites with the egg wash and sprinkle with salt.
  • Bake for 12-14 minutes until they are golden brown.

Serving

  • Serve with honey mustard for dipping!

Notes

If you have any pretzel bites left, store them in an airtight container in the fridge for up to three days. To enjoy them later, reheat in the oven for about 5-10 minutes. You can also freeze these delightful bites for up to three months.
