Ingredients
  

  • 3-4 cups fresh frozen, or canned peaches
  • 3/4 cup sugar for fresh, 2/3 cup (for frozen), 1/2 cup (for canned)
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon optional
  • 1 teaspoon vanilla extract optional
  • Pinch of salt

Instructions
 

  • In a medium saucepan, combine the peaches with sugar, lemon juice, and a pinch of salt. Let it sit for a few minutes.
  • Whisk cornstarch with a splash of water to avoid clumps, then stir it into the peach mixture.
  • Bring the mixture to a gentle simmer over low heat, stirring often.
  • After about 10 minutes, the filling should thicken and become glossy.
  • Remove from heat and stir in vanilla or cinnamon if desired.
  • Let it cool before using in your preferred dessert.

Notes
