Hobo Casserole (Ground Beef Recipe)

Ingredients
  

  • 1 lb ground beef (85–90% lean)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1.5 lb russet or Yukon Gold potatoes, thinly sliced
  • 1 tsp Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1.5 cups milk
  • 1 cup beef broth
  • 2 tbsp all-purpose flour (or cornstarch for GF)
  • 2 cups cheddar cheese, shredded
  • chopped parsley or chives, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  • Brown ground beef with onion and garlic; drain. Season with Worcestershire, paprika, salt, and pepper.
  • Whisk milk, beef broth, and flour in a saucepan; simmer 2–3 minutes until lightly thickened. Season to taste.
  • Layer half the potatoes, half the beef, one-third cheese, and one-third sauce. Repeat with remaining potatoes and beef; top with remaining sauce.
  • Cover with foil and bake 30 minutes. Uncover, add remaining cheese, and bake 10–15 minutes until bubbly and potatoes are tender.
  • Rest 10 minutes; garnish with herbs and serve warm.

Notes

Swap ground turkey or plant-based crumbles as desired. Use canned cream soup + milk for shortcut sauce. Frozen hash browns can replace sliced potatoes.
