Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and chop the potatoes into even-sized pieces.
  • In a bowl, combine the potatoes with olive oil, salt, pepper, and chopped herbs.

Cooking

  • Spread the potatoes in a single layer on a baking sheet.
  • Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, tossing halfway through.
  • Serve warm as a side dish.

Notes

If you have leftovers, let the herb roasted potatoes cool completely before storing. Place them in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven to bring back their crispiness.
