  • 1 piece prime rib roast (about 4-6 pounds)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 450°F (230°C).
  • In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, parsley, salt, and pepper to create a herb paste.

Cooking

  • Rub the herb paste all over the prime rib roast.
  • Place the roast in a roasting pan, bone side down, and roast in the preheated oven for 15 minutes.
  • Reduce the temperature to 325°F (160°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (135°F for medium-rare).
  • Remove from the oven and let it rest for 20 minutes before slicing.

Serving

  • Slice the prime rib into thick pieces and arrange them on a serving platter.
  • Serve with side dishes like roasted vegetables, mashed potatoes, or a fresh salad. A rich gravy or horseradish sauce can also complement the flavors.

Notes

Make sure your prime rib is at room temperature before cooking for even cooking. Use a meat thermometer to check the internal temperature for perfect doneness. Letting the roast rest before slicing is crucial for juicy and tender meat. Experiment with different herbs for a unique flavor.
