Ingredients
  

  • 1 cup whole wheat pancake mix or oat flour mix
  • 3/4 cup milk of choice almond, oat, or low-fat
  • 4 eggs 2 for batter, 2 for filling
  • 4 slices turkey bacon cooked and chopped
  • 1/2 cup light cheddar cheese
  • 2 tbsp pure maple syrup
  • salt and pepper to taste

Instructions
 

  • Cook bacon in skillet until crisp, then cut into small pieces.
  • Mix pancake batter with milk, eggs, and a drizzle of maple syrup.
  • Cook 3-inch mini pancakes until golden, about 1–2 minutes per side.
  • Scramble remaining eggs with salt and pepper until fluffy.
  • Assemble sliders: pancake, eggs, bacon, cheese, pancake. Warm to melt cheese.

Notes

Freeze in parchment layers for up to 2 months. Reheat in air fryer or toaster oven for 3–4 minutes.
