whole wheat pancake mix
or oat flour mix

milk of choice
almond, oat, or low-fat

2 for batter, 2 for filling

turkey bacon
cooked and chopped

light cheddar cheese

pure maple syrup
salt and pepper
to taste
Instructions
Cook bacon in skillet until crisp, then cut into small pieces.
Mix pancake batter with milk, eggs, and a drizzle of maple syrup.
Cook 3-inch mini pancakes until golden, about 1–2 minutes per side.
Scramble remaining eggs with salt and pepper until fluffy.
Assemble sliders: pancake, eggs, bacon, cheese, pancake. Warm to melt cheese.
Notes
Freeze in parchment layers for up to 2 months. Reheat in air fryer or toaster oven for 3–4 minutes.
