Healthy Crockpot Chicken Tacos

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 can 14oz diced tomatoes, drained
  • 1 can 4oz diced green chilies
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 limes juiced
  • corn or flour tortillas
  • fresh cilantro, chopped (for garnish)

Instructions
 

  • Add all ingredients except lime juice and garnishes to the slow cooker. Stir to combine.
  • Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  • Remove chicken and shred using forks. Return shredded chicken to slow cooker and stir in lime juice.
  • Serve with warmed tortillas and garnish with fresh cilantro.

Notes

Add extra veggies or toppings as desired. Keeps well refrigerated and freezes for easy meal prep.
