  • 2 cups chicken broth

  • 2 cloves garlic, minced

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onions and minced garlic, sautéing until softened—about 2-3 minutes.
  • Add cubed chicken breast to the skillet, cooking until browned and fully cooked through—about 5-7 minutes.
  • Stir in Cajun seasoning, ensuring the chicken is well-coated.
  • Add in the rice, chicken broth, light cream cheese, and grated Parmesan cheese.
  • Bring to a simmer. Cover and cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  • Season with salt and pepper to taste before serving.
  • Serve hot and enjoy your healthy Cajun chicken and rice!

Notes

For serving, garnish with freshly chopped parsley or green onions. Serve alongside a simple green salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
