  • 2 cups beef or chicken broth Use gluten-free broth for a gluten-free option.
  • 4 cups mashed potatoes Leftover or freshly made.
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add onions and garlic, cooking until softened.
  • Add ground turkey, cooking until browned.
  • Stir in carrots, peas, thyme, rosemary, salt, and pepper.
  • Pour in the broth and let simmer until vegetables are tender.
  • Transfer the turkey mixture to a baking dish.
  • Top with an even layer of mashed potatoes.
  • Bake in the preheated oven for 25-30 minutes, until the top is golden brown.
  • Let cool for a few minutes before serving.

Notes

For extra flavor, add a splash of Worcestershire sauce to the turkey mixture. This recipe can be easily modified with other vegetables like corn or green beans.
