Main Ingredients

  • 1 pound ground turkey
  • 1 can black beans, rinsed and drained
  • 1 cup enchilada sauce
  • 8 pieces corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • to taste Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, cook the ground turkey until browned.
  • Add the onion and garlic, cooking until the onion is translucent.
  • Stir in the black beans, cumin, chili powder, salt, and pepper. Remove from heat.
  • Spread a little enchilada sauce on the bottom of a baking dish.

Assembly

  • Fill each tortilla with the turkey mixture, roll them up, and place them seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the top and sprinkle with cheese.

Cooking

  • Cover with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
  • Garnish with fresh cilantro if desired. Serve hot.

Notes

Serve with optional toppings like sour cream, guacamole, or sliced jalapeños. These enchiladas can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
