  • 4 pieces medium zucchini
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup marinara sauce
  • 1 cup shredded cheese (mozzarella or cheddar) Use your choice of cheese.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchini in half lengthwise and scoop out the insides, creating ‘boats.’

Cooking the Filling

  • In a skillet set over medium heat, cook the ground beef along with the onion and garlic until the beef is browned and the onion becomes translucent.
  • Mix in the Italian seasoning, salt, pepper, and marinara sauce, allowing those flavors to meld together.

Assembly and Baking

  • Load each zucchini boat with the savory beef mixture.
  • Arrange the boats in a baking dish and top generously with shredded cheese.
  • Pop them into the oven and bake for 20-25 minutes, until the zucchini is tender and the cheese is melted and bubbly.
  • Serve hot and enjoy this tasty creation!

Notes

For added flavor, consider sautéing some diced bell peppers with the onions. For spice, sprinkle in red pepper flakes when cooking the beef. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 3 months.
