  • 2 pieces lobster tails (6-8 oz each)
  • 4 tbsp unsalted butter Can be swapped for olive oil for a lighter option.
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tsp paprika, smoked Smoked paprika adds extra flavor.
  • to taste salt & pepper
  • for garnish fresh parsley, chopped

Preparation

  • Preheat your grill to medium-high heat (350°F/175°C).
  • Using kitchen shears, carefully split the lobster tails in half lengthwise, leaving the shell intact.
  • In a small saucepan over low heat, melt the unsalted butter.
  • Stir in the minced garlic, lemon juice, paprika, salt, and pepper; simmer until fragrant.

Grilling

  • Place the lobster tails shell-side down on the grill and brush generously with the garlic butter mixture.
  • Grill for 6-8 minutes until the meat is opaque and slightly charred, basting every couple of minutes with the remaining butter.
  • Remove from the grill, garnish with fresh parsley, and serve immediately with lemon wedges.

Notes

Consider plating grilled lobster tails on a bed of jasmine rice or serving with a summer salad. Pair with white wine or lemonade for a delightful experience. To keep leftovers, store in an airtight container in the fridge for 1-2 days or freeze for 2-3 months.
