Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup rice or quinoa
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Optional: paprika Dijon mustard, fresh herbs

Instructions
 

  • Season the chicken with salt, pepper, and any other desired spices.
  • Grill chicken over medium-high heat for 6-7 minutes on each side until fully cooked.
  • Meanwhile, boil or steam broccoli until tender but still bright green, about 3-5 minutes.
  • Cook rice or quinoa according to package instructions.
  • In a bowl, whisk together Greek yogurt, olive oil, minced garlic, lemon juice, salt, and pepper to make the creamy garlic sauce.
  • Assemble bowls with a base of rice or quinoa, topped with grilled chicken slices, broccoli, and generous amounts of creamy garlic sauce.
  • Serve immediately, adding optional toppings as desired.
