  • 1/2 cup melted vegan butter
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon
  • 3 cups Rice Chex
  • 3 cups Corn Chex
  • 2 cups popcorn (preferably air-popped)
  • 1/2 cup crushed walnuts Can substitute with favorite nuts or seeds
  • 1 cup freeze-dried apple slices
  • 2 tbsp coconut or cane sugar

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a small mixing bowl, melt the vegan butter. Whisk in the vanilla extract and cinnamon until well combined.
  • In a large mixing bowl, combine the Rice Chex, Corn Chex, popcorn, crushed walnuts, and freeze-dried apple slices.
  • Pour the cinnamon sugar mixture over the dry mix. Toss everything together until evenly coated.
  • Spread the Chex mix onto a baking sheet lined with parchment paper or aluminum foil.
  • Bake for just 7 minutes, keeping a close eye on it to ensure it doesn’t burn.
  • Remove it from the oven once golden and fragrant, then sprinkle the coconut or cane sugar over the top and let it cool before serving.

Notes

Store in an airtight container at room temperature to keep it crunchy. Freeze portions if needed, but let it cool completely before freezing.
