  • Combine the crushed gingerbread cookies, cream cheese, ground ginger, ground cinnamon, and ground nutmeg in a bowl. Mix until everything is well blended.
  • Roll the mixture into small, truffle-sized balls and arrange them on a baking sheet.
  • Chill the rolled truffles in the fridge for about 30 minutes to firm them up.

Coating

  • While they chill, melt the chocolate according to the package instructions.
  • Once chilled, dip each truffle into the melted chocolate, ensuring they are completely covered.
  • Return the chocolate-coated truffles to the baking sheet.
  • Before the chocolate sets, sprinkle with festive sugar or an extra dash of spice for a holiday flair.

Storage

  • Allow the chocolate to harden completely, then store the truffles in an airtight container in the refrigerator until you’re ready to serve.
