Ingredients
  

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt

Wet Ingredients

  • 3/4 cup unsalted butter, softened Make sure it's softened but not melted for best texture.
  • 1 cup brown sugar, packed Can substitute with white granulated sugar if needed.
  • 1 large egg
  • 1/2 cup unsulfured molasses

Preparation

  • In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In another bowl, beat together the softened butter and brown sugar until fluffy.
  • Add the egg and molasses, mixing well.
  • Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  • Wrap the dough in plastic wrap and refrigerate for at least one hour.

Baking

  • Preheat the oven to 350°F (175°C).
  • Roll out the chilled dough on a floured surface to about 1/4 inch thick.
  • Cut out shapes with cookie cutters and place them on a baking sheet.
  • Bake for 8-10 minutes, until the edges are firm.
  • Let cool before decorating with Royal Icing, Glaze Icing, or Buttercream Frosting.

Notes

Store cookies in an airtight container for up to a week, or freeze in a sealable bag for up to three months. Decorate ahead of time if desired, and store in a cool, dry place.
