  • 1 whole whole turkey (12-14 pounds) Choose a fresh or thawed turkey.
  • 1 head head of garlic (cloves separated and peeled)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, chopped Feel free to substitute with other herbs.
  • 2 tablespoons fresh thyme, chopped You can mix different herbs based on preference.
  • to taste Salt and pepper
  • 4 cups chicken broth Use low-sodium for a healthier option.
  • 1 whole lemon, halved This adds a citrusy flavor.

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine the softened butter, peeled garlic cloves, chopped rosemary, thyme, salt, and pepper. Mix until well-blended.
  • Carefully lift the turkey's skin and spread the garlic herb butter mixture beneath the skin and over the breast.
  • Squeeze fresh lemon juice over the turkey, then place the halved lemon inside its cavity.
  • Position the turkey in a roasting pan and pour the chicken broth into the bottom of the pan.

Cooking

  • Cover the turkey loosely with foil and roast it for about 3-4 hours, removing the foil in the last 30-45 minutes to get that crispy skin.
  • Baste the turkey every so often with the pan juices to keep it moist.
  • Ensure the bird reaches an internal temperature of 165°F (75°C) before taking it out of the oven.
  • Let the turkey rest for 20-30 minutes before carving.

Notes

For a stunning presentation, carve the turkey right at the table and arrange on a large platter. Pair with classic sides such as mashed potatoes and cranberry sauce. Allowing the turkey to rest is crucial for juicy slices.
