Ingredients
  

For the Chicken

  • 4 pieces boneless skinless chicken breasts or thighs Breasts cook faster; thighs add more flavor.
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt For chicken mix
  • ¼ teaspoon black pepper For chicken mix
  • 1 tablespoon olive oil For chicken

For the Potatoes

  • 1.5 pounds baby Yukon Gold or red potatoes, halved Small, waxy potatoes are best.
  • 3 tablespoons olive oil For potatoes
  • 4 cloves garlic, minced Fresh gives the best flavor.
  • cup grated Parmesan cheese Preferably freshly grated.
  • ½ teaspoon salt For potatoes
  • ¼ teaspoon black pepper For potatoes
  • 1 tablespoon chopped fresh parsley For garnish
  • Additional Parmesan for broiling Optional for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  • Pat the chicken breasts dry with paper towels. Combine the Italian seasoning, smoked paprika, salt, and black pepper in a small bowl. Rub the chicken with olive oil and coat with the spice mixture.
  • In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper.

Cooking

  • Arrange the seasoned chicken on one side of the baking sheet and spread the coated potatoes on the other side.
  • Roast in the preheated oven for 25 to 30 minutes, flipping the potatoes halfway through. Ensure chicken reaches an internal temperature of 165°F.
  • In the final 5 minutes, sprinkle additional Parmesan cheese over the chicken and potatoes and broil until golden brown.

Serving

  • Remove from oven and sprinkle with chopped fresh parsley before serving.

Notes

Ensure to not overcrowd the pan for best results. Chicken can be prepared ahead of time and refrigerated until ready to cook.
