Ingredients
  

  • 1 medium fresh zucchini grated
  • 1 cup all-purpose flour or whole wheat
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil or butter
  • 1 cup sugar coconut, brown, or regular
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a large bowl, combine the grated zucchini, melted coconut oil, sugar, and vanilla extract.
  • In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  • Fold in the chocolate chips.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 15-20 minutes, checking with a toothpick for doneness (it should come out with a few crumbs).
  • Allow cooling in the pan before cutting into squares.

Notes

These brownies are best stored in an airtight container. They can also be frozen for longer storage. If you want a lower sugar option, try using coconut sugar.
