  • 2 cups fresh fruit (such as strawberries, oranges, and pineapple) Use ripe, seasonal fruit for the best flavor.

Jello Mixture

  • 1 cup sugar-free Jello mix (any flavor) Flavors like strawberry or orange pair beautifully with the fruit medley.
  • 1 cup water 1 cup of boiling water mixed with 1 cup of cold water for the Jello.

Optional Topping

  • 1 cup whipped topping Optional for serving, adds creaminess.

Preparation

  • Begin by following the package instructions for the sugar-free Jello. Combine 1 cup of boiling water with 1 cup of cold water, stirring until completely dissolved.
  • Once mixed, allow the Jello to cool in the fridge for about 30 minutes, or until it becomes slightly thickened.
  • In a large bowl, toss all your fresh fruit together.
  • Once the Jello has thickened, pour it over the fruit and gently mix until all the pieces are coated evenly.
  • Cover the bowl and refrigerate the salad for at least 2 hours.
  • When ready to serve, dish it out cold and top it off with whipped topping if desired.

Notes

Best enjoyed fresh. Keep any leftovers in an airtight container in the fridge for up to three days. Avoid freezing as the fruit's texture will change significantly.
