Easy White Chicken Chili

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb chicken breasts
  • 2 cans (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) green chilies
  • 1 can (15 oz) corn, drained
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 cup sour cream or Greek yogurt
  • salt and pepper, to taste
  • optional toppings: cilantro, shredded cheese, lime wedges

Instructions
 

  • Heat olive oil in a large pot. Sauté onion and garlic until softened.
  • Add chicken breasts and sear lightly. Pour in chicken broth and simmer until cooked through.
  • Shred chicken and return to pot. Add beans, corn, green chilies, and seasonings.
  • Simmer for 10 minutes, then stir in sour cream or Greek yogurt.
  • Serve hot with toppings of choice.

Notes

For Instant Pot version, cook on high pressure for 12 minutes before shredding chicken. For lighter broth, skip sour cream entirely.
