  • 4 large extra-large flour tortillas Choose pliable tortillas that are free of tears.
  • 9 oz sliced turkey Look for low-sodium or oven-roasted options.
  • 8 slices cheddar cheese Sharp cheddar offers more flavor, mild cheddar is kid-friendly.
  • 4 oz cream cheese, softened Use full-fat for richest spread and best binding.
  • 1 tbsp mayonnaise
  • 1/2 tsp Dijon mustard
  • 1 cup lettuce or baby spinach
  • 1 cup thinly sliced cucumber Salt and pat dry to prevent sogginess.
  • Salt, to taste
  • Black pepper, to taste

Preparation

  • Prepare the cream cheese spread by combining softened cream cheese, mayonnaise, Dijon mustard, salt, and black pepper until smooth.
  • Spread a thin layer of the cream cheese mixture over each tortilla, leaving a border.
  • Layer sliced turkey, cheddar cheese, lettuce or spinach, and cucumber evenly over the spread.
  • Roll each tortilla tightly into a log and refrigerate for at least 1 hour.
  • Slice into 1-inch pinwheels and serve.

Notes

For optimal freshness, store wrapped logs in the fridge for up to 3 days. Sliced pinwheels are best within 24-48 hours. Chill logs for cleaner slices.
