For the Pinwheels

  • 4 large extra-large flour tortillas Choose pliable tortillas that won't crack when rolled.
  • 9 oz sliced turkey Opt for thinly sliced deli turkey that’s moist.
  • 8 slices cheddar cheese Mild or sharp cheddar both work, slice thin.
  • 4 oz cream cheese, softened Full-fat for best mouthfeel.
  • 1 tbsp mayonnaise Mix with cream cheese for spread.
  • 1/2 tsp Dijon mustard
  • 1 cup lettuce or baby spinach
  • 1 cup thinly sliced cucumber Pat dry to avoid sogginess.

Instructions
 

Preparation

  • Prepare the cream cheese spread by combining softened cream cheese, mayonnaise, Dijon mustard, salt, and pepper until smooth.
  • Spread the cream cheese mixture evenly over each tortilla, leaving a small border.
  • Layer sliced turkey, cheddar cheese, lettuce or baby spinach, and cucumber on top of the spread.
  • Roll each tortilla tightly into a log and refrigerate for at least 1 hour.
  • Slice into 1-inch pinwheels and serve immediately.

Notes

Pinwheels can be stored in an airtight container in the fridge for up to 3 days. For freezing, flash-freeze before transferring to a freezer-safe bag.
