  • 4 pieces extra-large flour tortillas Look for tortillas labeled 'extra-large' or 'burrito size'.
  • 9 oz sliced turkey Choose thinly sliced, high-quality deli turkey.
  • 8 slices cheddar cheese Use full-fat for best texture.
  • 4 oz cream cheese Let soften slightly at room temperature before mixing.
  • 1 tbsp mayonnaise
  • 1/2 tsp Dijon mustard
  • 1 cup lettuce or baby spinach Pat dry to prevent sogginess.
  • 1 cup thinly sliced cucumber Use English cucumbers or remove seeds.

Preparation

  • Prepare the cream cheese spread by blending the softened cream cheese, mayonnaise, Dijon mustard, salt, and pepper until smooth.
  • Spread the mixture evenly over each tortilla.
  • Layer sliced turkey, cheddar, lettuce, and cucumber on the tortillas.
  • Roll each tortilla tightly into a log, wrap in plastic wrap, and chill for at least 1 hour.
  • Slice into 1-inch pinwheels and serve.

Notes

Store sliced pinwheels in an airtight container lined with paper towels for up to 3 days. Freeze uncut logs for up to 1 month. Chill fully wrapped logs on a flat tray for best shape.
