  • 1 lb ground meat (beef, turkey, chicken, or pork) 80/20 ground beef for juiciness; turkey or chicken for leaner options.
  • 12 small potatoes, diced (or as many as you like; cut to ~½-inch pieces) Small red or Yukon gold potatoes recommended.
  • 1 can condensed cream soup (mushroom, chicken, or celery) Shortcut for a velvety sauce.
  • ¾ cup cold milk Plus a splash more as needed for consistency.
  • to taste salt and freshly ground black pepper Adjust seasoning according to preference.
  • as desired shredded cheese Add cheese for extra creaminess.
  • as needed fresh herbs For garnish.
  • as needed frozen vegetables For extra nutrition.

Instructions
 

Preparation

  • Heat a large skillet or Dutch oven over medium-high heat.
  • Add the ground meat and season with salt and pepper. Break it up with a spatula as it browns.
  • Cook until there’s no pink left and the meat has golden-brown bits.
  • Drain excess fat if needed.

Adding Potatoes

  • Stir in the diced potatoes to mingle with the browned meat.
  • Cook for about 5 minutes, stirring occasionally.

Making It Creamy

  • Pour in the condensed cream soup and ¾ cup cold milk.
  • Stir until the mixture is smooth. Add more milk if needed.

Simmering

  • Reduce heat to medium-low, cover, and simmer.
  • Stir occasionally and check potatoes for doneness with a fork.
  • If it starts to stick, add a splash of milk or water.

Finishing Touches

  • Taste and adjust salt and pepper.
  • If using cheese, sprinkle over the top to melt.
  • Add frozen vegetables during the last 3-4 minutes of cooking.
  • Garnish with fresh herbs and serve hot.

Notes

Can be stored in the fridge for up to 3-4 days. Reheat gently with a splash of milk.
