  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat flour for a healthier twist.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  • In a large bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter until everything is well combined.
  • Next, add the sugar, beaten egg, and vanilla extract. Mix until fully blended.
  • Sprinkle the baking soda and salt over the mixture and stir gently.
  • Add the flour, stirring just until it disappears—be careful not to overmix!
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the banana bread cool in the pan for 10 minutes.
  • Transfer to a wire rack to cool completely before slicing.

Notes

For serving, enjoy a warm slice with butter or honey, or add Greek yogurt for breakfast. Store covered at room temperature for up to 3 days or in the fridge for a week. This banana bread freezes well; wrap slices tightly for up to three months.
