  • 2 cups cooked chicken, shredded Opt for rotisserie chicken for convenience.
  • 1 cup cherry tomatoes, halved Look for firm, shiny tomatoes.
  • 1 unit cucumber, diced
  • 1/2 unit red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced Choose olives packed in brine.
  • 1/4 cup feta cheese, crumbled Use a good-quality feta for best flavor.
  • 1/4 cup fresh parsley, chopped Substitute with dill or mint for variation.

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice

Preparation

  • In a large bowl, combine the cooked chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley. Mix to incorporate all the ingredients evenly.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate for later use.

Notes

Chill for 30 minutes before serving for the best flavor. Store in an airtight container in the refrigerator for up to 3 days.
