Ingredients
  

Pasta and Dressing

  • 2 cups pasta (like rotini or penne) Use good-quality dried pasta.
  • 1 cup Italian dressing Choose a balanced vinaigrette or make your own.

Vegetables

  • 1 cup cherry tomatoes, halved Look for firm, glossy tomatoes.
  • 1 cup cucumber, diced Use firm cucumbers or English cucumbers.
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup black olives, sliced

Seasoning and Garnish

Instructions
 

Preparation

  • Cook the pasta according to package instructions; drain and rinse immediately under cold water.
  • Prep the vegetables by halving the cherry tomatoes, dicing the cucumber, onion, and bell pepper, and slicing the olives.

Mixing

  • Combine the cooled pasta and all the prepared vegetables in a large bowl.
  • Pour the Italian dressing over the salad and toss to combine.
  • Season with salt and pepper to taste.

Serving

  • Garnish with fresh basil or parsley if desired.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes
