Ingredients
  

Potato mixture

  • 2 pounds potatoes (Yukon Gold or Russet)
  • 4 tablespoons butter
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 large egg yolks
  • 1/4 cup grated Parmesan cheese (optional) For added flavor

Garnish

  • Fresh parsley For garnish, optional

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the potatoes, then boil them in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot.
  • Add in the butter, heavy cream, garlic powder, salt, and pepper. Mash until smooth.
  • Stir in the egg yolks and Parmesan cheese until well combined.

Baking

  • Transfer the mixture to a piping bag fitted with a star nozzle.
  • Pipe the potato mixture onto a baking sheet in swirls or dollops.
  • Bake in the preheated oven for 15-20 minutes, or until golden brown on top.
  • Garnish with fresh parsley if desired. Serve hot.

Notes

Make sure to mash the potatoes well to avoid lumps. Adjust seasonings as desired. A piping bag is ideal for shaping but spooning is acceptable. Variations include adding different cheeses or bacon bits.
