Instructions
Preheat the oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, beat together the oil, granulated sugar, and brown sugar.
Add the eggs and vanilla extract to the wet mixture and mix until smooth.
Combine the wet and dry ingredients, mixing just until no lumps remain.
Fold in the grated zucchini and chocolate chips.
Pour the batter into the prepared loaf pan and sprinkle extra chocolate chips on top if desired.
Bake for 50 to 60 minutes or until a skewer inserted into the center comes out mostly clean.
Allow to cool in the pan for at least 15 minutes before removing.
Notes
This bread keeps well at room temperature for up to 3 days covered. For longer storage, freeze slices wrapped in cling film.
