Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups packed grated zucchini
  • 1 cup chocolate chips
  • Extra chocolate chips for topping optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, beat together the oil, granulated sugar, and brown sugar.
  • Add the eggs and vanilla extract to the wet mixture and mix until smooth.
  • Combine the wet and dry ingredients, mixing just until no lumps remain.
  • Fold in the grated zucchini and chocolate chips.
  • Pour the batter into the prepared loaf pan and sprinkle extra chocolate chips on top if desired.
  • Bake for 50 to 60 minutes or until a skewer inserted into the center comes out mostly clean.
  • Allow to cool in the pan for at least 15 minutes before removing.

Notes

This bread keeps well at room temperature for up to 3 days covered. For longer storage, freeze slices wrapped in cling film.
