Doritos Casserole with Chicken

  • 8 oz Philadelphia Chive Whipped Cream Cheese
  • 10.5 oz condensed cream of chicken soup
  • 1 bunch green onions, chopped Reserve 1/4 cup for topping
  • 3 cups cooked and shredded chicken Use rotisserie chicken for convenience
  • 8.75 oz canned corn Drained
  • 3 cups shredded Mexican cheese blend Divided into two cups for the mixture and one for topping
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 3 cups Doritos, crumbled

Instructions
 

Preparation

  • Preheat your oven to 400°F (204°C).
  • In a large mixing bowl, dump the cream cheese and cream of chicken soup. Use an electric mixer to whip them together until the mixture is smooth.
  • Set aside 1/4 cup of the chopped green onions. Add the remaining green onions to the mixing bowl.
  • Add the shredded chicken, drained canned corn, 2 cups of the shredded Mexican cheese blend, salt, pepper, and garlic powder to the bowl. Mix everything together until fully combined.
  • Pour the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
  • Sprinkle the crumbled Doritos on top of the mixture.
  • Add the remaining cup of shredded Mexican cheese blend and the set-aside 1/4 cup of chopped green onions over the Doritos.

Baking

  • Place the baking dish in the oven and bake for 17-20 minutes, or until the cheese on top starts to brown.
  • Once done, serve and enjoy!

Notes

Serve hot, paired with a side salad, sour cream, or salsa. Store leftovers in the fridge for up to 3-4 days or freeze for up to 2 months.
