Instructions
 

Preparation

  • In a large pot of salted boiling water, cook the short pasta according to package instructions until al dente.
  • While the pasta cooks, combine the mayonnaise, sour cream, pickle brine, yellow mustard, salt, and sugar in a large bowl. Stir until smooth.
  • Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and chop into bite-sized pieces.
  • Once the pasta is done cooking, drain and let it cool slightly. Add the pasta to the dressing, followed by the pickles, mini cucumbers, cheese, red onions, bacon, and fresh dill. Toss everything together until well coated.

Serving

  • Chill in the fridge for at least 30 minutes for the flavors to meld beautifully before serving.

Notes

For best results, cook pasta al dente to absorb the dressing without becoming mushy. You can make this salad a day in advance for more developed flavors.
