  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, diced Choose firm peppers without blemishes.
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise or Greek yogurt Greek yogurt offers a lighter alternative.
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt To taste
  • 1/2 teaspoon black pepper To taste
  • 1 cup crushed tortilla chips For crunch
  • 1/4 cup fresh cilantro, chopped Optional

Preparation

  • In a large bowl, mix together the cooked corn, cherry tomatoes, cucumber, red bell pepper, and red onion.
  • In a separate bowl, whisk together the mayonnaise (or Greek yogurt), apple cider vinegar, dijon mustard, garlic powder, salt, and black pepper until smooth.
  • Gently toss the vegetables with the dressing until everything is evenly coated.
  • Fold in the crushed tortilla chips for some added crunch.
  • Cover the salad and let it chill in the fridge for at least 30 minutes to allow the flavors to meld.

Notes

Choose the freshest corn for the best flavor. For a creamier salad, increase the dressing ingredients slightly. Meal prep ingredients the night before if you're short on time. This salad is perfect for summer picnics!
