  • 1 tablespoon sriracha Adjust to taste for spice level.

Main Ingredients

  • 1 lb chicken breast, diced Fresh fillets provide the best texture. Rotisserie chicken can also be used for faster prep.
  • 2 cups cooked rice Use warm rice for better texture.
  • 1 cup shredded carrots
  • 1 cup cucumber, diced
  • 2 pieces green onions, sliced
  • Salt and pepper to taste
  • Lime wedges for serving Squeeze fresh juice over the bowl before serving.

Preparation

  • In a bowl, combine mayonnaise, sweet chili sauce, and sriracha. Adjust spice level to your preference.
  • In a skillet over medium heat, cook the diced chicken until fully cooked, seasoning with salt and pepper.
  • In serving bowls, layer cooked rice as the base and top with cooked chicken.
  • Generously drizzle the bang bang sauce over the chicken.
  • Top your bowl with shredded carrots, diced cucumber, and sliced green onions.
  • Serve with lime wedges on the side, squeezing fresh juice over the bowl.

Notes

Ensure even cooking by keeping the chicken at medium heat. This dish can be stored in an airtight container in the fridge for up to three days or frozen separately from the sauce. Adjust sriracha according to spice tolerance.
