  • 2 pieces English cucumbers or Persian cucumbers Look for firm, blemish-free cucumbers.
  • 2 pieces ripe firm tomatoes (Roma or beefsteak) Choose slightly tender tomatoes for best flavor.
  • 1 piece red onion Soak in ice water to tone down sharpness if desired.

Dressing Ingredients

  • 2 tablespoons granulated sugar (or honey/maple syrup) Adjust to taste.
  • 1/4 cup apple cider vinegar (or white wine vinegar/red wine vinegar)
  • 1-2 tablespoons extra virgin olive oil (optional)
  • to taste Salt
  • to taste Freshly ground black pepper
  • to taste Fresh dill (optional)
  • to taste Fresh parsley (optional)
  • to taste Fresh mint (optional)

Instructions
 

Preparation

  • Wash and prep the cucumbers by slicing them into ΒΌ-inch thick rounds or half-moons. Peel if necessary.
  • Wash and core the tomatoes, then dice them into bite-sized pieces.
  • Peel and slice the red onion as thinly as possible. Soak in ice water if desired.
  • In a large mixing bowl, combine all prepared vegetables.

Dressing

  • In a small bowl or jar, whisk together apple cider vinegar, chosen sweetener, olive oil (if using), salt, and pepper until the sugar dissolves.

Combine and Chill

  • Pour the dressing over the vegetables and gently toss until evenly coated.
  • Add fresh herbs if using, cover, and refrigerate for at least 30 minutes before serving.

Notes

For best results, use chilled ingredients, adjust sweetness to taste, and taste before serving. Cover with plastic wrap in the fridge to prevent odors.
