  • 2 pounds Yukon Gold or Russet potatoes Can use either type of potato.
  • 4 tablespoons olive oil or melted butter Use melted butter for richer flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary Or any herb of your choice.
  • to taste Salt and black pepper

Preparation

  • Peel the potatoes if desired and cut them into evenly sized chunks, about 1.5 inches each.
  • In a large pot, bring salted water to a boil. Add the potato chunks and parboil for about 10 minutes until they’re starting to soften. Drain and let them sit for a few minutes to dry out.

Cooking

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the dried potatoes with olive oil (or melted butter), garlic powder, onion powder, rosemary, salt, and pepper until evenly coated.
  • Spread them out on a baking sheet in a single layer. Roast for 30-40 minutes, turning halfway through, until beautifully golden and crispy.

Serving

  • Once done, remove them from the oven and serve hot alongside your favorite dishes.

Notes

For added flavor, toss with fresh herbs or a squeeze of lemon juice right before serving.
