Ingredients
  

Cheese Mixture

  • 1 cup Shredded Cheddar Cheese Can substitute with Monterey Jack or pepper jack.
  • 1 cup Shredded Mozzarella Cheese Consider using provolone or Gouda as alternatives.

Pickles and Seasonings

  • 1/2 cup Chopped Dill Pickles Use bread-and-butter pickles or pickled jalapeños if preferred.
  • 1 teaspoon Garlic Powder Onion powder can also be added for a different kick.

Coating

  • 1 cup Breadcrumbs Use gluten-free breadcrumbs for a gluten-free version.
  • as needed Nonstick Spray For easy baking and cleanup.
  • 1 sheet Parchment Paper For lining the baking sheet.

Preparation

  • Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper. Lightly spray the parchment with nonstick spray.

Mix the Cheese and Pickles

  • In a bowl combine the shredded cheddar and mozzarella with the chopped dill pickles and garlic powder. Stir until the pickles are evenly distributed.

Form and Coat

  • Use a small spoon or a cookie scoop to portion out bite-sized mounds. Roll each mound lightly between your palms to compact it, then roll in breadcrumbs until fully coated.

Bake

  • Bake for 8–12 minutes, rotating the pan halfway through. Watch for a golden-brown color and bubbling cheese under the coating.

Cool and Serve

  • Remove from the oven and let the bites rest for 2–3 minutes before transferring to a serving plate.

Notes

Serve warm with a sharp mustard dip or a cool ranch for dipping. These bites can be made ahead and reheated, and they freeze well for later use.
