  • 1 cup Shredded cheddar cheese Cheddar is a crowd favorite, but feel free to substitute.
  • 8 pieces Corn tortillas Can substitute with flour tortillas or lettuce wraps.
  • 1 packet Taco seasoning Pre-packaged or homemade.
  • 1 cup Enchilada sauce For drizzling over tacos.

Preparation

  • In a skillet, brown the ground beef over medium heat until fully cooked.
  • Drain any excess fat from the skillet and stir in the taco seasoning according to package instructions.
  • In a separate pan, warm the corn tortillas until they’re pliable and slightly toasted.

Assembly

  • Fill each tortilla with a generous amount of the seasoned beef mixture before topping with shredded cheese.
  • Drizzle enchilada sauce over the filled tacos for added flavor and seasoning.
  • Serve immediately, garnished with fresh cilantro, diced tomatoes, or a dollop of sour cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, wrap in foil and warm at 350°F for about 10 minutes.
