  • Cook the Gnocchi: Start by cooking the gnocchi according to the package instructions. Once they float to the surface, they’re ready! Drain and set aside.
  • Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté until it becomes fragrant—about 1 minute.
  • Add the Spinach: Toss in the fresh spinach and stir frequently until the leaves are wilted and vibrant in color.
  • Stir in Cream: Pour the heavy cream into the skillet and mix well, allowing it to come to a gentle simmer.
  • Combine Gnocchi and Feta: Add the cooked gnocchi and crumbled feta cheese, stirring gently until everything is well combined and heated through.
  • Season and Serve: Season to taste with salt and pepper. Serve warm, garnished with grated Parmesan cheese if you like for an extra touch of flavor.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. To reheat, use a skillet over low heat and add a splash of cream or milk to restore its creamy consistency.
